Slow Cooker Mongolian Beef

There are no excuses not to cook a delicious dinner with this easy slow cooker Mongolian Beef recipe. Simply dump everything into your slow cooker and come home to an amazing sweet, salty, spicy low carb dinner, that is also kid approved.


There are easy recipes, and then there are recipes so easy it is literally dump and go, meaning that you 'dump' all the ingredients into your slow cooker, set it to low and walk away. This is one of those recipes and it's such an easy comfort food dinner that the whole family will love, and the best part is minimal washing up.




Serves: 7 tiny tummy portions, 4 regular sized portions

Ingredients


600g oyster blade steak

1/4 cup soy sauce

2 cloves of garlic, minced

1/3 cup monkfruit sweetener

1/4 cup water

1 tbsp sesame oil

1/2tsp ground ginger

1/4tsp chili flakes

2 shallots, only the green part chopped

Sesame seeds, to garnish


Instructions


  1. Slice the steak thinly and place in the bottom of the slow cooker.

  2. In a bowl mix together the soy sauce, garlic, monkfruit sweetener, water, sesame oil, ground ginger and chili flakes.

  3. Pour the sauce over the steak.

  4. Place the lid on the slow cooker and cook on low for 6 hours.

  5. To serve, sprinkle the chopped shallots and sesame seeds over the beef.

Tip: If meal prepping, reheat in a pan on low. Serve over cauliflower rice or for a carb filled meal try a mix of brown rice and quinoa.

If you're wanting to serve it super low carb and up your protein, simply whisk an egg in a bowl with a dash of water, salt and pepper and fry on low to create an egg 'tortilla', then top with the beef and garnishes.
